Chicken with Tahini Sauce

Something that is very simple to make is my grilled chicken with tahini sauce. Tahini sauce the way Nani makes it 😋

Ingredients

. 1/2 cup tahini

. 1/2 cup – 1 cup water (depending on how thick you want your sauce

. 4 fresh mint leaves, chopped finely

. 1/4 brunch parsley, chopped finely

. 1 tomato cut into tiny cubes

. 1/2 tbsp salt

. 1 garlic clove, finely chopped

. 1 tsp cumin

. Juice of 1/2 lemon

. 4 chicken breasts

Procedure

1. Heat either a grill pan or your outdoor grill to 500 degrees fahrenheit and heat your oven to 350 degrees farenheit.

2. Salt and grill the chicken breasts, 5 minutes on each side and then transfer to a sheet pan and cover with foil. Place in the oven and bake for 40 minutes.

3. While the chicken is baking, in a bowl using a whisk mix all the rest of the ingredients together. At first it might look like it’s just too chunky but just keep whisking and add 1 tablespoon of water at a time until you get to your desired consistency.

4. Once the chicken is done baking, plate it and top with the tahini sauce.

Mariet’s Bean Salad

So I come home one day from a catering gig, and my mom was so excited about a new recipe she came up with recently. She looks at me with big eyes, nephew on hip, and says, “Look what I made today! It was so good everyone loved it. You should make this for your next event.”

So of course I did and what do you know? Everyone loved it. So credit to my mama for this delicious and very easy salad.

Serves 6-8 people

Ingredients

. 2 – 15.5 oz can of red kidney beans, rinsed

. 2 – 4 oz can of sliced mushrooms, rinsed

. 1 onion, thinly sliced

. 1/2 bunch of Italian flat leaf parsley, coarse chopped

. 1 tsp paprika

. 1 tsp dried oregano

. 1 tsp dried thyme

. 1 tsp salt

Procedure

1. Put all ingredients in a bowl and massage into the onions, mushrooms, and beans. Place in bowls and serve.

Simple Pasta with Pancetta and Goat Cheese

This is one of the easiest and flavorful pastas. It’s so simple that I have to hold myself back from making it every night. If you like garlic, you’ll love this. Don’t forget the wine!

Ingredients

.16 oz. bag dried spaghetti (or whatever type of pasta you like)
.4 tablespoons EVOO
.5 garlic cloves, finely chopped
.1/2 bunch of Italian parsley, finely chopped
.1/4 cup of white wine
.4 oz. goat cheese log (sliced into 4 slices of 1/4 inch thick)
.4 slices of pancetta, cooked to crispiness

Procedure

  1. Bring a pot of water to boil.
  2. Add the dry pasta and boil for 11 minutes.
  3. While the pasta is boiling, in a sauce pan add 2 tablespoons of EVOO on medium heat.
  4. Add the garlic and cook until the garlic creates an aroma.
  5. Add the white wine and let it cook and thicken like a sauce.
  6. Add the parsley.
  7. By this time, the pasta should be all done. Add the pasta into the saucepan and mix.
  8. Plate the pasta and on top add a slice of pancetta and a slice of goat cheese.

And there you have it, a simple, easy, fast, and not to mention delicious pasta dinner. Anush!

Peyaz

This delightful topping is so useful. I use it as a pizza topping, in sandwiches with kebab, salads…

It’s so simple to make that you can make a bunch and keep it in the fridge up to a week and a half and it’ll still be good!

Ingredients:

.1 onion, very thinly sliced
.half bunch of italian parsley, coarsely chopped
.2 twigs of fresh mint, finely chopped
.2 twigs of fresh oregano, finely chopped
.1 tbsp sumac
.1/2 tsp salt
.red pepper (to your taste)
.1/2 tsp cumin

Procedure

  1. Mix all ingredients together in a bowl until well combined and serve.

Lavash Flatbread Pizza

There is nothing like getting creative with pizza. This one is the easiest thing you can do especially if you only have 5 minutes to make a quick dinner. I like making this on the grill too, but you can do it in the oven too.

 

Ingredients

Makes 1 pizza
1 lavash bread
3 tablespoons EVOO
1/2 cup mozzarella cheese, shredded
1/2 cup green olives
1/4 cup peyaz (an Armenian mixture of onions, parsley, and spices…don’t you worry, next post is all about this lovely topping

Procedure

  1. Preheat oven to 400 degrees Fahrenheit (if you are grilling, preheat the grill to high heat)
  2. On a sheet pan lined with parchment paper, place you lavash bread and drizzle with 1/2 the amount of EVOO (1 1/2 tablespoons)
  3. Add the green olives and the peyaz, finally topping it off with all the mozzarella cheese
  4. Drizzle with the remaining EVOO and place the sheet pan in the oven for about 5 minutes or until the lavash edges are golden (if you are grilling slide the pizza right onto the grill to get the nice grill marks on the bottom)
  5. Take it out of the oven and place on a cutting board to slice into triangles and serve
