Blueberry French Toast Casserole

Serves 4 people

. 3 tablespoons butter
. 1 loaf french bread, cut up in cubes
. 1 cup milk
. 6 eggs
. 1 cup sugar
. 1 tablespoon cinnamon
. pinch of salt
. 8 ounces blueberries

1. 2 hours prior to serving brunch, butter a 9 inch baking pan and place all the cubed bread in it.
2. In a bowl, whisk the milk, eggs, sugar, cinnamon, and salt.
3. Pour the milk and eggs mixture over the bread.
4. Spread the blueberries over the top, tucking in a few between the bread cubes and place small chunks of butter over the whole casserole.
5. Let sit for 30 minutes.
6. Preheat the oven to 375 degrees Fahrenheit.
7. Once the oven is hot, cover your pan with foil and bake in the oven for 35 minutes.
8. Next, take the foil off the pan, and bake for another 10 minutes or until golden.
9. Once you take it out of the oven, let it sit for about 5 minutes and then serve with boysenberry syrup.


Talina’s Pesto

There are so many delicious recipes for pesto… so of course I have one of my own too!

It’s not too different from the traditional pesto recipe, but its just so delicious.
Pesto is great to put on toast with some tomatoes and extra olive oil, pasta, a grilled cheese and pancetta sandwich, ….oh the possibilities. Try me recipe out and let me know what you think

. food processor

. 1 bunch of fresh basil
. 1/4 cup almonds
. 1/4 cup grated white cheddar cheese
. 3 garlic cloves
. 1/2 cup EVOO
. juice of 1 lemon
. salt and pepper to taste

1. Pull the basil leaves off the stems of the basil. Add it to a food processor.
2. Add the rest of the ingredients into the food processor and pulse until it becomes super fine and spreadable.
3. Enjoy on some fresh made pasta or a piece of toast.

Brunch You Say?

I think by now most of you see that I really like brunch and I really like fritatta’s, especially for my family. I feel like it brings us together after a long week and we can come together and enjoy a good meal in the morning. We joke, we laugh, we talk about how the week went- It’s all good! While my Amo and Tantik were here we had a couple delightful brunches together.

The last week they were here I made (what do you know?) a fritatta! But with it I made these delicious puff pastry flat bread with zaatar and olive oil.

thumb_P1017329_1024They were quite the big hit. My Amo and Tantik really enjoyed them too. The fritatta was delicious too of course.

The table was set with three different types of jam including fig, apricot (from Armenia), and orange. Of course, you cant have jam without the butter! We each had our cup of coffee and cup of O.J. and enjoyed the rest of the day off.

Flapjacks or Pancakes?

I love a good, hearty breakfast. I am a morning person, so I like to load up in the morning to have enough energy for the day. Sunday mornings are perfect for a pancake breakfast, listening to the birds chirp outside with the ray of sunshine coming through my kitchen window.. it’s so perfect. This morning, I did my favorite kind of topping to my pancakes.. or flapjacks… whatever you like calling them!

Talin’s style pancakes have honey, cinnamon, and slivered almonds. I love getting that perfect bite of sweetness, spice, crunch, and softness all in one. Good morning!!!
